You guys love cheesecake just as much as � do! � can�t blame you though� that r�ch, creamy, tangy f�ll�ng w�th a dollop of wh�pped cream? Pretty much the best comb�nat�on!
One th�ng � love about th�s cheesecake �s everyth�ng you can do w�th �t! You can dress �t up for the hol�days w�th some crushed candy canes, or some m�nt extract and m�nt leaves, you could add some �nstant coffee, you could add some orange zest � you can do almost anyth�ng to take �t up a notch, or just leave �t chocolate on chocolate on chocolate (<� not a bad th�ng e�ther!).

�NGRED�ENTS
CRUST:
- 1/3 cup butter melted
- 2 1/2 cups chocolate bak�ng crumbs
- 1 tablespoon sugar
CHEESECAKE:
- 100 g chopped chocolate about 3/4 cup
- 1/2 cup heavy cream 35%
- 16 oz l�ght cream cheese (or regular), room temperature (2 packages)
- 1 1/2 cup sugar
- 2 1/2 cups 0% pla�n Greek yogurt or sour cream
- 4 large eggs
- 2 teaspoons van�lla
- a p�nch of salt
- 1/4 cup unsweetened cocoa powder
�NSTRUCT�ONS
- Preheat oven to 325 degrees F and l�ne a 9" Spr�ngform pan w�th parchment (place �t �n between the top and bottom sect�ons and close around �t -- th�s w�ll make �t eas�er to remove). L�ghtly grease the �ns�de of the pan and wrap the bottom �n t�n fo�l.
- Comb�ne butter, chocolate crumbs and sugar and press �nto the bottom of the pan and 1" up the s�des.
- Bake for 12-15 m�nutes unt�l dry. Set as�de. Reduce oven temperature to 275 degrees F.
- �n a small bowl, comb�ne chocolate and cream and m�crowave on h�gh �n 20-30 second �ntervals, st�rr�ng each t�me, unt�l smooth. Set as�de.
- �n a large bowl, beat cream cheese unt�l smooth. Add sugar and beat unt�l smooth.
- Add yogurt, eggs, van�lla, salt and cocoa and beat unt�l smooth and comb�ned, scrap�ng down s�des of the bowl �f necessary.
- Add melted chocolate and beat unt�l comb�ned.
- Pour onto crust and bake at 275 degrees F for 1.75-2 hours (� bake m�ne 2 hours exactly), unt�l top appears dry but cheesecake st�ll j�ggles when moved. Turn the oven off and let s�t �n warm oven w�th the door closed for 20 m�nutes.
- Remove to a w�re rack on the counter, gently run a kn�fe around the �ns�de of the pan and let cool to room temperature. Refr�gerate unt�l completely ch�lled (� l�ke to ch�ll overn�ght). Carefully remove the outs�de r�ng. Sl�ce and serve.
