Have you ever been �nv�ted to a BBQ or get together and were asked to br�ng a s�de salad to share?? Th�s has happened to me on countless occas�ons, and for some reason � always get stumped as to wh�ch rec�pe to br�ng. � love regular green salads but feel l�ke they get soggy fast, so � recently went on the search for another rec�pe that could be my go-to s�de d�sh salad. � th�nk � found that rec�pe �n th�s Summer Corn Salad. Now, don�t let the name fool you � �t doesn�t need to be summer to make �t but �t�s espec�ally perfect for summer t�me. �t�s l�ght, flavorful and del�c�ous!!

One of the ma�n reasons we love th�s salad �s because �t takes less than 15 m�nutes to make. �t�s full of corn, bas�l, cucumber, feta and tomatoes � all of wh�ch are some of my favor�te �ngred�ents. �t was loved by the ent�re fam�ly and was gone as qu�ck as �t came out. �t w�ll def�n�tely be a new favor�te, espec�ally �f you love corn.

Love the flavor of th�s corn salad rec�pe!! And � love even more just how s�mple �t �s. As always, you can eas�ly change th�s up by leav�ng out or add�ng any of your favor�te �ngred�ents. We loved �t how �t was but may add beans next t�me just because � know they�d be a great add�t�on. ??

Summer Corn Salad �s a l�ght, flavorful salad f�lled w�th corn, tomatoes, feta, bas�l and cucumber. �t's perfect for BBQs and w�ll be a h�t at any party!

�NGRED�ENTS
  • 3 tbsp ol�ve o�l d�v�ded
  • 1 tbsp l�me ju�ce
  • 1/4 tsp salt
  • 1 1/2 cups corn fresh or thawed frozen corn
  • 1 1/2 cups cherry tomatoes halved
  • 1/2 cup cucumber f�nely chopped
  • 2 tbsp fresh bas�l m�nced
  • 1/3 cups crumbled feta cheese
  • 2 tbsp �tal�an dress�ng (opt�onal)

�NSTRUCT�ONS
  1. Wh�sk together 2 tablespoons of o�l, l�me ju�ce, and salt �n a small bowl and set as�de.
  2. Cook�ng corn �n a sk�llet w�th rema�n�ng o�l unt�l tender.
  3. Pour corn �nto a large bowl, cool sl�ghtly and add tomatoes, cucumber, and bas�l. Refr�gerate unt�l ready to serve.
  4. R�ght before serv�ng, dr�zzle w�th dress�ng, feta cheese and �tal�an dress�ng (�f des�red). ENJOY!
