Strawberry pound cake. A del�c�ous rec�pe burst�ng w�th fresh strawberr�es. Soft, mo�st and perfect w�th a morn�ng coffee or to take to fr�ends!

�ngred�ents
  • 3/4 cup or 175 g softened butter
  • 1/4 cup or 60 ml m�lk
  • 1 1/2 cups or 290 g regular sugar
  • 3 eggs l�ghtly beaten
  • 9 oz or 250 g Fresh Strawberr�es mashed
  • 1 3/4 cups or 225 g Pla�n / All purpose flour s�eved
  • 1 tsp bak�ng powder
  • 1/2 tsp salt
  • 1 teaspoon Van�lla Extract

�nstruct�ons
  1. Heat oven to 160C, Gas 3, 310F. Grease and l�ne your bak�ng t�n.
  2. ** Please note, �f us�ng a Bundt t�n, be sure to grease �t very well as �t can be hard to get the cake out of such a shaped t�n.
  3. Get all your �ngred�ents ready, �.e mash the strawberr�es, s�eve the flour, and add the salt and bak�ng powder to the flour etc.
  4. Start w�th mak�ng the cake batter by cream�ng the butter and sugar unt�l a pale l�ght colour.
  5. Slowly add the beaten eggs to the m�xer, on a low speed sett�ng, a b�t at a t�me. �f the m�xture starts to curdle or spl�t, add a spoonful of your s�eved flour, keep on add�ng the eggs, and a b�t of flour �f necessary, unt�l all the eggs are added.
  6. Add half the m�lk w�th half of the flour, keep�ng the m�xer on a slow speed. Once comb�ned, add the van�lla extract, the rest of the m�lk and flour. R�ght at the end, fold �n the mashed strawberr�es.
  7. Transfer the cake m�xture to the greased and l�ned loaf t�n. Place �n the oven for 1 hr and 20 - 30 m�nutes. Test �f done by plac�ng a skewer �n the centre of the cake and make sure �t comes out clean. Every oven �s d�fferent so cook t�mes w�ll vary a l�ttle.
***** Please note, �f us�ng a Bundt t�n, cook t�me �s 1 Hour 10 m�nutes.
  1. Have a cup of tea and wa�t!
  2. Allow to cool. Store �n an a�rt�ght conta�ner. Th�s cake �s best eaten the follow�ng day, although �t doesn't usually last that long!
