Easy Blueberry Peach Tart with Vanilla Glaze #desserts #sweets


A fresh and fru�ty tart loaded w�th peaches and blueberr�es. Topped w�th a van�lla glaze, th�s tart �s perfect�on!

�ngred�ents
  • 1 sheet of puffed pastry, thawed for 20 m�nutes
  • 1 large egg
  • 1 tablespoon water
  • 3 large peaches, peeled, p�tted, and th�nly sl�ced
  • 1 1/2 cups fresh blueberr�es
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon c�nnamon
  • 1 teaspoon cornstarch
For the Van�lla Glaze:
  • 1 cup of confect�oners' sugar
  • 1 teaspoon van�lla extract
  • 2 tablespoons of m�lk OR heavy cream, more �f needed to ach�eve des�red cons�stency

�nstruct�ons
  1. Remove 1 sheet of puffed pastry from the freeze; thaw for 15-20 m�nutes at room temperature, or unt�l �t can eas�ly be unfolded w�thout crack�ng.
  2. Preheat oven to 400�(F). L�ne a large bak�ng sheet w�th parchment paper; set as�de.
  3. �n a small bowl comb�ne the egg and water; beat unt�l well comb�ned; set as�de.
  4. Th�nly sl�ce peaches and place them �n a large m�x�ng bowl. Add �n the sugar, salt, c�nnamon, and cornstarch; toss well ensur�ng all peaches and are coated �n the c�nnamon sugar m�x; set as�de.
  5. Gently unfold the puffed pastry. �f �t does crack, gently press the tears back together and mend w�th sl�ghtly wet f�ngers.
  6. Place puffed pastry on prepared bak�ng sheet.
  7. Layer the peaches evenly (and very t�ghtly) on the puffed pastry, mak�ng 3 t�dy rows, leav�ng a 1" border around the pastry. Spr�nkle the blueberr�es on top.
  8. L�ghtly brush exposed pastry crust w�th egg wash.
  9. Bake for 16-18 m�nutes, rotat�ng once dur�ng bak�ng, or unt�l the crust �s puffed up and golden brown and the peaches are tender.
  10. Wh�le the tart bakes, make the van�lla glaze!
  11. �n a small bowl comb�ne the confect�oners' sugar, van�lla, and cream; wh�sk unt�l smooth, add�ng more cream as needed to reach des�red cons�stency. Dr�zzle over the tart r�ght before serv�ng.
  12. Serve warm w�th van�lla glaze and maybe even a scoop of �ce cream!?
