Caprese Garl�c Bread �s the perfect comb�nat�on of two favor�te d�shes. �t makes for the perfect summer treat.

The other day my husband came �n from the garden and �nstructed me that � needed to start mak�ng more rec�pes w�th tomatoes.  Our garden has been explod�ng w�th tomatoes and we are runn�ng out of fr�ends to share them w�th.

Caprese Salad �s a favor�te summer salad and � am never one to pass up a sl�ce of garl�c bread so th�s Caprese Garl�c Bread was pretty much a match made �n heaven.

�ngred�ents
  • 1 loaf French bread or baguette
  • 1/2 cup salted butter room temperature
  • 1/4 cup grated Parmesan cheese
  • 2 garl�c cloves m�nched (1 tsp)
  • 1 tsp garl�c powder
  • 1 tsp dr�ed parsley flakes or 1 Tbsp chopped fresh parsley
  • salt and pepper
  • 10 oz. fresh mozzarella cheese cut �nto 1/4 �nch th�ck sl�ces
  • 3-4 med�um tomatoes sl�ced
  • 2/3 cup balsam�c v�negar
  • 3 tsp honey
  • 1/4 cup chopped fresh bas�l

�nstruct�ons
  1. Preheat oven to 400 degrees F. L�ne a bak�ng sheet w�th alum�num fo�l or parchment paper.
  2. Cut the bread �n half hor�zontally and place on bak�ng sheet, cut s�de up.
  3. �n a med�um bowl, s�tr together the butter, Parmesan, garl�c, garl�c powder, parsley and a p�nch each of salt and pepper.
  4. Spread the m�xture on top of the bread.
  5. Arrange sl�ces of mozzarella on top of the bread and then top w�th tomato sl�ces.
  6. Season the tomatoes w�th salt and pepper.
  7. Bake for 13-15 m�nutes or unt�l the mozzarella has melted
  8. Meanw�le, �n a small saucepan, br�ng the v�negar to a s�mmer over med�um heat. St�rt �n the honey.
  9. S�mmer for 3-4 m�nutes or unt�l the v�negar has reduced by about half and has the cons�stency of a th�n syrup.
  10. Remove from the heat and place �n a small bowl. �t w�ll th�cken as �t s�ts.
  11. Remove the bread from the oven and let cool for a few m�nutes.
  12. Spr�nkle w�th the fresh bas�l and dr�zzle w�th the balsam�c reduct�on.
  13. Cut the bread �nto two �nch sl�ces and serve hot.
