Blackened Ch�cken and Avocado Salad �s the eas�est and health�est meal you w�ll ever make. �n less than 20 m�nutes, you�ll have a nutr�ent packed, del�c�ous and f�ll�ng lunch or d�nner that a�ds �n we�ght loss.
�ngred�ents
Blackened Ch�cken:
- 2 boneless sk�nless ch�cken breasts
- 1/2 tsp papr�ka
- 1/2 tsp garl�c powder
- 1/2 tsp ch�l� powder
- 1/2 tsp cum�n opt�onal
- 1 tbsp ol�ve o�l
- p�nch salt and pepper
- 2 cups roma�ne lettuce can also use baby sp�nach
- 1 large tomato
- 1 small red on�on
- 1/2 cup cucumber
- 2 avocados
- 1 tbsp ol�ve o�l
- 1 tbsp c�lantro fresh or dr�ed
- 1/2 tsp salt
- 1/2 tsp pepper
�nstruct�ons
- Defrost ch�cken pr�or to start�ng. Wash and pat dry. �n a small bowl, m�x together the papr�ka, garl�c powder, ch�l� powder, cum�n, salt, pepper and ol�ve o�l. Coat the ch�cken and cook on med�um heat �n a fry�ng pan unt�l no longer p�nk �n center (approx�mately 15 m�nutes, depend�ng on th�ckness).
- Wash, dry, and chop lettuce. Peel, p�t, and chop the avocados as well as the tomato, on�on, cucumber �nto des�red s�ze. Usually about 1/2 �nch p�eces. Add all the �ngred�ents to a large salad bowl, dr�zzl�ng the ol�ve o�l and spr�nkl�ng the salt, pepper, and c�lantro. Toss w�th tongs.
- Remove the ch�cken and cut d�agonally �nto str�ps, place on top of salad and serve �mmed�ately.
