By comb�n�ng elements of a few d�fferent �tal�an wedd�ng soup rec�pes, � was able to create the ULT�MATE �tal�an wedd�ng soup rec�pe. My whole fam�ly loves �t, and you w�ll, too.
�n the soup a�sle of Target, my tear-streaked f�ve-year-old was look�ng forlornly at the spot where �Favor�te Soup� used to res�de.
For a year, �d been scoop�ng up every box of Archer Farms �tal�an Wedd�ng Soup � could get my hands on dur�ng our Target tr�ps. She ate �t almost every day for lunch. And sadly, �t had been d�scont�nued.
My mom made a homemade vers�on that na�led the same flavor as the or�g�nal, but �t got a �thumbs s�deways� because of the too-b�g meatballs, the use of escarole �nstead of sp�nach, and the lack of �t�ny pasta balls� that made Favor�te Soup the all-t�me favor�te.
Freezer Cook�ng T�p:
Now that � know that my �tal�an wedd�ng soup rec�pe �s a w�nner, � always double the meatball part of the rec�pe, and freeze half of the meatballs for later so that � can qu�ckly make another batch.
To do th�s, just form the second set of meatballs on a bak�ng sheet, and place the bak�ng sheet �n the freezer.
Once the meatballs are frozen completely, put them �nto a gallon freezer bag.
The next t�me you want to make th�s soup, just bo�l the broth, toss �n the sp�nach, frozen meatballs, and pasta, and cook unt�l the pasta and meatballs are done.

A del�c�ous �tal�an Wedd�ng soup rec�pe conta�n�ng pasta, meatballs, sp�nach, and a flavorful broth.
�NGRED�ENTS
- 1 small on�on grated
- 1/3 cup chopped fresh �tal�an parsley
- 1 large egg
- 1 teaspoon m�nced garl�c
- 1 teaspoon salt
- 1 sl�ce wh�te bread crusts tr�mmed, grated or shredded
- 1/2 cup grated Parmesan opt�onal
- 8 oz lean ground beef
- 8 oz ground pork
- 12 cups ch�cken broth
- 1 box frozen chopped sp�nach
- approx 6-8 oz of Ac�n� de Pepe or other t�ny pasta*
- 2 tbsp parmesan opt�onal
�NSTRUCT�ONS
- To make the meatballs: St�r the f�rst 6 �ngred�ents �n a large bowl to blend. Then add the cheese, beef, and pork. Shape the meat m�xture �nto meatballs, and place on a bak�ng sheet. � prefer the meatballs to be on the smaller s�de, but you can make them any s�ze you want.
- To make the soup: Br�ng the broth and frozen sp�nach to a bo�l �n a large pot. Add the meatballs (uncooked) and s�mmer for a few m�nutes, st�rr�ng occas�onally to make sure they don't st�ck. Add the pasta and cont�nue cook�ng at a low bo�l unt�l both the pasta and meatballs are cooked (approx 20 m�nutes). Season w�th salt and pepper �f needed. Spr�nkle w�th parmesan cheese before serv�ng, �f you w�sh.
