Avocado Eggs

Ingredients:
Chopped fresh coriander
4 tbsp. tomato salsa
Salt and pepper
4 eggs
2 avocados

Instructions:
  • First step is Preheat your oven to 180 degrees. Chop the avocados in half and remove the pits. Scoop out a little of the avocado flesh to make room for the egg. Place the avocado in a baking dish, side up. Add 1 tbsp. tomato salsa and crack one egg in each avocado half. Season with some salt and pepper. Put the avocados in the oven and bake for 12-15 minutes. Top with coriander and serve with warm toast.
